Last weekend Howard and I went to meet our friend at Katz’s for dinner and ended up having one smelly, funky night.

Everyone was enjoying their fried pickles when the hostess seated some nasty people next to us. Their funk drifted over to our table and lingered for the entire meal. This stench was so rancid I couldn’t eat my food. Oh, don’t worry… I left a nice comment card for the waiter. Then while we were leaving a homeless man tried to hit us up for some money. What is wrong with people these days!?

October 1st was one cool and breezy morning! I stepped outside and fell in love with the crisp cool air that swept around the corner of our house. I love this month so much and I look forward to drinking lots of pumpkin spice lattes from Starbucks.

Aww! Look at her and her happy face. This is while we chilled at a coffee house on Bagby Street near downtown. I must say that the coffee drinks at Coffee Groundz are delicious.

Oh and have you ever watched the movie, “The Gate” when you were younger. I believe it came out in 1987 and it’s about this boy and his sister opening a gate to Hell. This movie was so awesome when I was little and now that I just watched it again I realized I still love it.  :D

Dozing Off Into Nightmares

I am in bed wondering what I will dream of next. I already had a dream of parties in the street that ended up inside an ancient Greek home. There were people trying to get in our small room. This room was very small and had a lot of windows. I cannot begin to explain how terrified I was in this nightmare. I almost do not want to go to sleep some nights for fear of dreaming these horrible scenarios. Maybe one day I will turn these dreams into a movie and I will frighten you.

I can barely keep my eyes  open…

Keepin It Real…Colorful That is..

I decided to bring back the rainbow cake for another birthday this month. This one was a little different than the traditional cake a prepared a few weeks earlier.

You will need:

1 box of white cake mix (eggs, oil, and water)

1 can of cream cheese icing

8 half pint mason jars

1 9″x13″ pan

5 small bowls

5 food coloring gels ( I used red, yellow, green, blue, and purple)

Preheat your oven to 350 degrees. Take your 8 mason jars and wash them thoroughly. Now dry them off completely and spray the inside of the jars lightly with a non-stick cooking spray.

Follow the cake instructions on the box to prepare your batter.

Then take the 5 small bowls and fill them up with even amounts of batter to get the ready for coloring. Next add a specific color to each bowl and start mixing. Be careful, if you add too much food dye you may be able to taste it later. Once you have achieved your desired shade it is now time to start layering the batter.

Start by filling the jars with about a 1 1/2 tbsp full of purple batter. Next add the blue batter keeping a nice, somewhat even layer on top of the purple. Add the next colors using the same technique. I like to layer my colors purple, blue, green, yellow, and red but you can layer them in whatever order you want. :)

After you are done filling up the 8 jars, add about a 1/4″ inch of water to a 9″x13″ pan and place all 8 jars inside.

Bake in oven for about 35 to 40 minutes or until top of cake bounces back after touching or a toothpick inserted comes out clean.(If you feel your cake is not done leave it in there for an extra 5 minutes. Keep a good eye on it though. You don’t want to over bake these little ones.)

When the cakes are done let them cool for about 20 minutes. (I like to let them cool this long because the jars are usually still warm to the touch after 10 minutes.)

Time to frost!

If your cake has risen too much out of the jar that is quite all right. Just simply scoop some of the cake out and clean the edges. Now you have room for some frosting.

Take your can of frosting and dye it whichever color you wish…or don’t. (I chose yellow because it’s a bright color.) Mix the frosting and the dye together to get your desired shade. Scoop heaping tablespoons into the jars and swirl them around. Next add a few sprinkles while the frosting is still soft.

Stand back and admire! You’re all done!

I hope you like it and have fun baking!
